(From Marilyn) Construction - I recall him telling Leno that he knows which end of a screwdriver is which, and he worked on "St. Russell's Basilica" -- so he apparently enjoys such work.  If he and his mates took up tools for Habitat for Humanity, as Harry Connick suggests, they could get some frames together fast.

Collector - Watches, guitars, art work, Antiques – is said to have “wonderful taste and is quite knowledgeable”

Building communities: per donations for swimming pool to local school, and setting up emergency response service in Nana Glen.

History: It was his principal interest in school and continues still.

Sports Wear designer: The Ohara Valley footy team, the Axemen. He also contributed ideas to Armani for his Oscar tux.

Tree planting on a huge scale on his farm and surrounding land he owns.

Collecting religious artifacts for Russell's Basilica - and crosses and crucifixes

Rebuilding a piano, even though he doesn't play.

Painting, pictures for charity

Animals: (besides his cows)  We all know how he loves his horse, Honey.  He has often mentioned the farm dogs, too.

Business – he is known in Sydney to have a very good “nose for business.”  He thoroughly studies the entity before he makes an investment.

Architecture (and photography?) – when filming Gladiator, it was said he spent much of his time off photographing architectural styles surrounding the particular location.

Pool excavation.  Russell personally dug the pool excavation for his Olympic size pool at the farm in Nana Glen
